Genuine traditional fishing and culinary experience on best Mediterranean island for getaway
They say that a fish in Dalmatia swims three times: once in the sea, once in olive oil during preparation and once in wine as it is washed down with the meal. Join us on a unique fishing and cooking class with an outstanding local fisherman and chef to put that theory to the test.
Fishing is of course part and parcel of island life, and for those with a passion for fishing, a tour with Pavo Kordic takes you into a world of traditional fishing, island life and the harsh but beautiful realities of being the only family to live almost full-time on the island of Scedro.
Learn the ‘kancenica’ fishing technique with Pavo, then take the fruits of your catch back to his restaurant in a stunning and peaceful bay shared only with a couple of houses and a ruined 16th century monastery and prepare an exquisite fish lunch to remember.
The tour starts properly in the pretty southern resort of Zavala, about a 35 minute drive from Hvar Town through picturesque central Hvar and its UNESCO World Heritage Site, the Stari Grad Plain. Olive groves, vineyards, lavender fields in season, it is not hard to understand why Hvar’s Mediterranean Diet recently became intangible UNESCO heritage.
In Zavala You will meet your host, Mr.Pavo Kordić, a passionate chef and fisherman with whom you will board his fishing boat and proceed to try your luck in the abundant waters between Hvar’s southern shore and the island of Scedro which Pavo calls home.
You will learn to use the fishing technique of “kancenica”, fishing by dropping numerous hooks each weighted differently for the various types of fish…After about two hours of fishing, you will reach the island of Šcedro and Pavo’s house and small restaurant where You will start to prepare the catch. Fishing is an art form, and Pavo has plenty of tricks to share, but so too is its preparation, and here too Pavo excels, the reason why sailors from far and wide sail into Scedro each summer. Local fishing and cooking secrets on an all but deserted island – truly the Mediterranean as It Once Was.
Please note that this tour is usually taken from April to June and in September and October. Due to Pavo’s peak season commitments in the restaurant, this tour is only available by arrangement in July and August.
